Mangalore Buns

Ingredients

Maida - 1cup
Wheat flour -1cup
4-5 bananas(small sized)
Sugar - 7-8tbsp
Salt to taste
Cumin seeds - 1tsp
1/2 teaspoon of baking soda
Sour buttermilk/curds - 1/2 cup
Oil for deep frying

Method

  • Peel and slice the bananas. Grind it in to a smooth paste in a mixer/blender with little Salt, Sugar and little buttermilk/curds. (You can even mash these in a bowl using hands).
  • Transfer this paste into a bowl. Add the remaining buttermilk, 1/2 tsp baking soda and cumin seeds.
  • Add maida and wheat flour little by little and knead it into a dough.
  • Here we need soft,rubbery dough. It should not be hard.

  • Wet a thin cloth, squeeze out the water, cover the dough completely with this cloth and allow it to rest at room temperature for 6-7 hours. 
  • After 6-7 hours it is ready to be made into buns.
  • Make lemon sized balls, roll it out to a thick round shape. Don't flatten too much.
  • Take a frying pan. Heat oil. Fry the buns on medium flame until it turns in to golden brown color.
  • Serve these fluffy buns with coconut chutney/sambar.
